Crockpot Apple Sauce

- 16 medium-size apples
- ½ cup water
- 2 T lemon juice
- 2 T pure vanilla extract
- 2 tsp. ground cinnamon
- If desired, add sweetener of your choice
- Core and dice the apples into one inch slices. (We like to leave the peel on the apples)
- Place in a large crockpot. Add the water, lemon juice, vanilla, and cinnamon. Stir to coat.
- Cook on low in the slow-cooker for four hours.
- Use a potato masher to make chunky applesauce. Use an immersion blender if you desire smoother applesauce.
- Enjoy warm (our favorite!) or cold. Freeze in small containers or plastic bags if desired.
